It started with a question: How can we create more resource-efficient alternatives to conventional eggs? As Co-Founder and Managing Director of Planty Foods, that’s exactly what I set out to do. Together with the German Institute of Food Technologies (DIL), we developed “Hei” — a plant-based alternative to scrambled egg. The project was supported by the Growhouse High-Tech Incubator.
